Once all the meat has been chopped and served, if they haven’t already been lured in by the intoxicating smell that has filled the area, invite all the neighborhood dogs over to clean up the ground around the chopping table.

NOTE: The dogs may never leave.

I never thought I’d own my own barbecue restaurant. Heck, at one point in my life I decided to quit barbecue for good. I was working at Skylight during my teenage years with both Pete and Bruce. Each of them can be gruff, but Bruce raised me to always be respectful, and he never let anyone be disrespectful, or embarrass me in front of anyone. One day I did something wrong, but it wasn’t anything big. It didn’t matter to Pete. At the counter, in the middle of a full restaurant, Pete just laid into me. He wasn’t used to being talked back to, but I wheeled around and said, “Who do you think you’re talking to?” I lost it. His jaw dropped when I told him, “I ain’t one of your hunting dogs, you understand? Just because I’m your grandson, doesn’t mean I have to work here. Do you get that?” I didn’t pursue another career the next day or anything, but I never forgot that day. I don’t think he did, either.
